RECIPE - 3X SWEET POTATO


The sweet potato is such a great addition to your meal. As an extra vegetable but also as a replacement for the normal potato. Mashed, as fries or of course baked. It is so diverse and easy to prepare. If you are firing up the BBQ, just wrap it in tinfoil and put it between the coals or on the grill. We have found three different ways of topping your sweet potato. Just choose your favourite or prepare all of them!

Preparation of the sweet potato

Scrub the sweet potato and pierce the potato with a fork three times all over. This way the steam can come out while cooking. Now you can either wrap it in tinfoil and put it on the BBQ or prepare it in the microwave in 5 minutes. If you choose the last one, take some paper kitchen towel and wet them. Wrap them in the paper and put them in the microwave at 600 Watt or more. You can take 5 minutes per potato. So if you want to prepare three in one go, put them in for approximately 15 minutes.

Sweet potato with bacon and tarragon

100 grams of bacon

1 tablespoon yoghurt

1 tablespoon aioli

handful of tarragon

  • Bake the bacon on medium heat.

  • Mix the aioli and yoghurt and add 2/3 of the chopped tarragon.

  • Slice the potato open and fill up with the sauce, bacon and finish with the rest of the tarragon

Sweet potato with avocado and parsley

1/2 avocado

1 tablespoon yoghurt

1 tablespoon aioli

handful of flat parsley

  • Slice the avocado

  • Mix the aioli and yoghurt

  • Slice the potato open and fill up with the sauce, avocado and finish with the flat parsley

Sweet potato with mushrooms

100 grams mushrooms

1 tablespoon of butter, coconut oil or olive oil

1 tablespoon yoghurt

1 tablespoon aioli

tablespoon flat parsley

tablespoon tarragon

  • Slice the mushrooms and bake them until they are brown

  • Mix the aioli and yoghurt and add 2/3 of the chopped herbs

  • Slice the potato open and fill up with the mushrooms, sauce and finish with some unchopped parsley and tarragon.
