RECIPE - GLUTENFREE CHICKEN NUGGETS
From time to time my kids ask to go to the big M for dinner. As a true foodie I don't want to give in. That's why I came up with my own version of chicken nuggets. Glutenfree, baked in the oven and sooooo super tasty. I even made the sweet and sour sauce. For the kids I threw in a small gift and they absolutely loved it. No more rides to the big M here anymore!

Ingredients (for 20 nuggets)
400 grams chicken thigh
1 table spoon gluten free flour (if you don't have to eat glutenfree, you can use normal flour)
salt
pepper
curry powder
2 eggs
200 gram glutenfree cornflakes (if you don't have to eat glutenfree, you can use normal cornflakes)
2 table spoons ketchup
2 table spoons ginger syrup
How to
Preheat the oven 180C (350F)
Cut the chicken thigh in even pieces
Put them in a seal bag with a table spoon of (glutenfree) flour, salt, pepper and curry powder.
Close it and shake it well until all pieces of chicken are covered
Break 2 eggs in a bowl and mix well, season with some salt and pepper
Put the cornflakes in a kitchen machine and cut until finely ground crumbs
Put a baking sheet on your oven tray
Dredge the chicken in the egg mixture and then cover the chicken with the cornflakes crumbs
Lay the chicken nuggets on the oven tray
Put the chicken in the oven for 20 minutes (check to be sure after 15 minutes)
In the meantime make the sweet and sour sauce by mixing 2 table spoons of ketchup with 2 table spoons of ginger syrup (or more if you really like your sauce)
