RECIPE - PINK PEPPER PINEAPPLE
When you BBQ, do you also prepare your dessert on the BBQ? We love to use all the heat and that's why we came up with this Pink Pepper Pineapple BBQ dessert.
That doesn't mean you can only prepare it on the BBQ, you can also get your grillpan out. We serve it with whipped cream and sugared nuts, but you can also serve it with ice-cream or go healthy and just serve the pineapple.

Ingredients (serves 6)
pineapple
5 grams pink pepper
50 grams pinenuts
30 grams almonds (raw and unsalted)
35 grams brown sugar/ Muscovado sugar
35 grams salted butter
50 grams sirup (Zeeuwse keukenstroop)
200 ml cream

How to
Prepare the sugared nuts
Bring the sirup, salted butter and sugar to the boil in a thick bottomed pan. Let it simmer until it thickens more.
Add the nuts and stir well
Spread it out over a flat surface lined with baking paper. Let it cool in the fridge.
Clean the pineapple by taking of the head and bottom and the skin
Cut in thin slices and remove the inner circle, the heart of the pineapple
Spread the pineapple over a tinfoil bbq dish and sprinkle the pink pepper over the pineapple
Put the tinfoil dish on the BBQ and leave it on for about 5 -10 minutes until golden brown. Turn them to brown the other side
Slice the sugared nuts in small pieces and whip the cream with some sugar
Serve about two slices of pineapple per person with the pink pepper and garnish with the sugared nuts and whipped cream.
