RECIPE - FRESH FENNEL SALAD

With the apple season in its full glory, I just long making things with apples. That's why we made this fennel salad with apple and cranberries. Look at all the colours! It just makes you so happy! 

This recipe is either for a huge lunch for one or a side salad for two.


Ingredients

  • 1 fennel (or 2 small ones)

  • 1 apple

  • 60 grams Parmesan cheese

  • 2 hands of cranberries

  • 50 grams Rocket salad

  • olive oil

  • lemon juice (from half a lemon)

How to

  • Wash the fennel and remove any bruised spots. Slice the fennel thinly.

  • Slice the apple in  8 pieces and then into thin slices. 

  • Slice the cheese in thin slices or cubes. 

  • Put the fennel, apple, cheese, cranberries and rocket salad in a nice bowl. Dress with olive oil and lemon juice. Toss it and most importantly: ENJOY!
