This dessert is super healthy and the taste is so fresh and sweet. It consists of only 4 ingredients but the combination makes it mind blowing tasty! It's easy to make but it does take some prep time and some good old attention and love. And if you really loco, you can even serve it for breakfast!
Ingredients (serves 2)
300 gram coconut yoghurt (100% coconut)
40 grams mixed walnuts and pecan nuts
2 table spoons honey
mint leaves or cress (Koppert Atsina or Honny cress) to decorate
Take the yoghurt and put it in the cheesecloth. Put it over a bowl with enough room between the bottom and the cloth. Leave it for at least one hour.
Cut the nectarine in two, remove the pit and cut in slices.
Put the grillpan on a high heat and put the nectarine slices on the grill. Do not move them around in order to get a nice grilling pattern. Turn them around to grill them at the other side. Set them aside
Put the nuts in a pan together with 1 table spoon of honey. Keep an eye on it and keep turning the nuts until they are crispy brown.
Put a bit of the coconut yoghurt in a nice glass, dress with the nectarine and keep a small piece for decoration. Add the nuts and a half tablespoon honey per glass. Finish it with more coconut yoghurt, a small piece of nectarine and some mint leave or cress.
