RECIPE - BASIC DUTCH CAKE

Do you also have your own recipe book? With recipes that you have been using for years already? This basic cake recipe have been in my booklet for a long time and I use it several times per year. A few weeks ago my husband felt like baking a cake and bought a cake mix. I looked at him with a offended smile and within an hour I showed him you don't need a cake mix. I also use it at least once a year when one of my sons wants to treat the kids at school at his birthday. As his birthday is close to Halloween we made this spider cupcakes. 

Ingredients (makes one cake or 12 cupcakes)

  • 240 grams butter

  • 200 grams caster sugar (or even better: basterdsuiker)

  • 180 grams double sifted flour

  • 200 grams eggs (about 4 eggs)

  • 0,5 grams salt

How to

  • Preheat the oven at 160 degrees Celsius

  • Use all the ingredients at room temperature

  • Grease your baking tin and sprinkle some flour over it

  • Take your mixer out and batter the soft butter with the sugar until it is fluffy and almost white. I have a Kenwood machine and always use the K beater for it.

  • Beat the eggs a little bit and add a little bit of the egg mixture to the butter/ sugar mix. When it is dissolved you can add a little bit more until all the egg is added. 

  • Add the salt and whisk one more time 

  • The mixture seems to go wrong now but when you add the flour it is solved.

  • Get the mixture out of the machine and fold in the double sifted flour. Make sure to fold it as the mixture will stay more fluffy. 

  • Put the mixture in the cake tin or in cupcake cases. 

  • Bake the big cake for 60 minutes and the cupcakes for 30 minutes. Check whether they are done by putting a toothpick or wooden skewer in. If it comes out wet, it needs more time. 

To make the spider cupcakes, I used black cupcake cases and made some icing from icing sugar with water to make the plastic spiders stick. This was gold icing sugar which made it even more festive.
