Yesterday evening I all of a sudden realised I had to prepare something for a business breakfast. Really nice to start after the summer with some Nordic Fika with the team but as a foodie people expect something of you. So I took a dive into all the kitchen cabinets and came up with these chocolate date truffles. And I can tell you... they were a big hit! They are gluten free, paleo, vegan, dairy free, sugar free...well the whole shebang. This time I served them at breakfast but they go especially well with a cup of tea or coffee. It's the perfect substitute for sweet unhealthy stuff.

Ingredients (about 20 truffles)

  • 150 gram dates

  • 45 grams glutenfree oatmeal

  • 45 grams unsalted raw hazelnuts

  • 2 teaspoons raw cacao

  • pinch of salt

  • 2 table spoons coconut oil

  • raw cacao to dip the truffles

How to

  • Put the dates, oatmeal, hazelnuts and raw cacao in the foodprocessor and blitz until blended.

  • Add the coconut oil and a punch of salt.

  • Taste and see if the consistency is good enough to form a ball. If not add some coconut oil (if too dry) or some oatmeal (if too wet).

  • Roll the balls and add the truffle look by rolling them in the cacao.
