RECIPE - CHOCOLATE DATE TRUFFLES
Yesterday evening I all of a sudden realised I had to prepare something for a business breakfast. Really nice to start after the summer with some Nordic Fika with the team but as a foodie people expect something of you. So I took a dive into all the kitchen cabinets and came up with these chocolate date truffles. And I can tell you... they were a big hit! They are gluten free, paleo, vegan, dairy free, sugar free...well the whole shebang. This time I served them at breakfast but they go especially well with a cup of tea or coffee. It's the perfect substitute for sweet unhealthy stuff.
Ingredients (about 20 truffles)
150 gram dates
45 grams glutenfree oatmeal
45 grams unsalted raw hazelnuts
2 teaspoons raw cacao
pinch of salt
2 table spoons coconut oil
raw cacao to dip the truffles
How to
Put the dates, oatmeal, hazelnuts and raw cacao in the foodprocessor and blitz until blended.
Add the coconut oil and a punch of salt.
Taste and see if the consistency is good enough to form a ball. If not add some coconut oil (if too dry) or some oatmeal (if too wet).
Roll the balls and add the truffle look by rolling them in the cacao.
