RECIPE - PEARLCOUSCOUS SALAD WITH SALMON
For your office lunch, a picknick or a party...this festive and healthy pearl couscous salad is always a winner. And so easy to make!
This recipe is counts for four or five 1-person portions and is perfect as a side salad for a big dinner party.
200 grams pearl couscous
2 big tomatoes
handful of finely chopped flat parsley
100 gram smoked salmon
juice of 1 lime
good quality olive oil
Boil the couscous in a large pan with enough water for about 12 minutes (check your own brand for specific instructions). Add quite an amount of salt as you will drain most of it and you don't have to season the salad anymore afterwards.
Finely hop the cucumber, the tomatoes and the parsley.
When the couscous is cooked, drain it and put it in a nice bowl. Add the cucumber, tomatoes, parsley, salmon, lime juice and olive oil. Toss it nicely and serve with a handful of rocket salad. Enjoy!!
If you want to prepare it a day in advance, no problem at all. But leave the rocket salad out and add just before serving.
You can also add the following according to your taste:
- Feta cheese
- Artichoke hearts
