RECIPE - CHICKEN VEGGIE LASAGNE
There some of these weekdays that you just don't have any time to prepare a healthy meal. This chicken lasagne with lots of veggies without any pasta (so gluten free) is easy to prepare. When you come home you just have to shove into the oven. Some oven can even be controlled via wifi. How easy is that...coming home and immediately dive into this tasteful lasagne.
1 aubergine (or eggplant)
1 courgette (or zucchini)
4 mozzarella balls
400 grams chickenthigh
1 tin tomato cubes
250 grams cherry tomatoes
200 gram Crème fraiche
Pepper en salt
50 grams of grated Parmesan cheese
Take a mandoline or a really sharp knife and cut the aubergine and courgette in thin slices.
Cut the chicken thigh in small pieces
Slice the cherry tomatoes in 4
Tear the mozzarella in small pieces
Cover the bottom of your oven dish with som olive oil
Put the first layer of aubergine and courgette on the bottom
Put half of the chicken pieces on the veggies
Put half of the tinned tomato cubes and half of the cherry tomatoes on the chicken
Add 1/3 of the mozzarella
Add some pieces of basil and season with pepper and salt
Cover this again with aubergine, courgette, chicken, tomato (tinned and fresh), mozzarella and seasoning
Put another layer of aubergine and courgette on top
Cover with creme fraiche and Parmesan cheese
Either cool to put into the oven later or immediately put in the oven for 1 hour at 2o0 degrees Celsius.
